Cooking: Scafata

I made this last week and it turned out really well. I'll take a better photo tonight if I make it. It's also vegan and really tasty.

Scafata


2 tbsp olive oil
½ cup shelled fava beans
½ cup chopped onion
½ cup chopped leeks or fennel
1 ½ cups chopped chard leaves
1 ½ cups chopped, peeled tomatoes
Salt and pepper

Cook oil, beans, onion, leek or fennel, and chard over low heat in medium saucepan. When beans are quite tender, after about 45 minutes, add tomatoes and cook for another 25 min. Season to taste with salt and pepper. 1 cup chopped carrots may also be added.
